Amanda's Tomato Soup

Serves 4 | Prep Time 15 | Cook Time 25


1 can crushed tomatos 24 oz
1 diced shallot
1 TBS minced roasted garlic
1 tsp Sea Salt ( or to taste)
1 tsp fresh ground black pepper
3 TBS / 4 TBS olive oil
1 cup whole sun dried tomatos ( not in oil )
3/4 cup heavy cream
A handful fresh Basil
1 tsp dried sweet Basil

Take 1 cup sun dried tomatos and add 4 TBS oil and garlic, blend in food processor or blender until combined and chopped well

Sautee The remaining oil and shallot in pan until transparent

Then add in the Sundried tomato garlic mixture sautee for about 5 minutes

Add remaining ingredients except the cream, cook on medium to low heat for about 10 -20 minutes

Add cream and serve

I made this up one day after seeing a cooking show about herbs!!! This tomato soup is so robust and favorfull you will love it!!! I will never need to go out to find the perfect tomato soup again!!
