  • 1 can crushed tomatos 24 oz
  • 1 diced shallot
  • 1 TBS minced roasted garlic
  • 1 tsp Sea Salt ( or to taste)
  • 1 tsp fresh ground black pepper
  • 3 TBS / 4 TBS olive oil
  • 1 cup whole sun dried tomatos ( not in oil )
  • 3/4 cup heavy cream
  • A handful fresh Basil
  • 1 tsp dried sweet Basil


  • Take 1 cup sun dried tomatos and add 4 TBS oil and garlic, blend in food processor or blender until combined and chopped well
  • Sautee The remaining oil and shallot in pan until transparent
  • Then add in the Sundried tomato garlic mixture sautee for about 5 minutes
  • Add remaining ingredients except the cream, cook on medium to low heat for about 10 -20 minutes
  • Add cream and serve


I made this up one day after seeing a cooking show about herbs!!! This tomato soup is so robust and favorfull you will love it!!! I will never need to go out to find the perfect tomato soup again!!
