Amish Baked Barbecue Chicken
1 (3-pound) broiler cut up
1 small onion, sliced
1 1/2 cups ketchup
1/2 cup packed light brown sugar
1/4 cup worcestershire sauce
2 Tbls. lemon juice
1 Tbls. liquid smoke
Preheat oven to 375 degrees. Spray 9 X 13 baking dish with nonstick cooking spray. Place chicken in prepared dish, top with onion slices.
Combine ketchup, brown sugar, worcestershire sauce, lemon juice and liqud smoke in small saucepan. Heat over medium heat 2 - 3 minutes or until sugar dissolves. Pour over chicken.
Bake chicken 1 hour or until juices run clear. Discard onion slices. Let stand 10 minutes before serving.
Serve with baked potatoes, crusty french bread and a tossed green salad.
