Ingredients

1 ½ sticks of unsalted butter
1 ¾ cups of sugar
2 large eggs
2 Teaspoons of pure vanilla
½ teaspoon of salt
2 ½ teaspoons of baking powder
2 ½ cups of flour
1 ¼ cups of milk
1 stick of unsalted butter
1 box of Domino confectionary sugar
¼ cup half-and-half
1 teaspoon of pure vanilla

1 ¾ cups of sugar


Beat unsalted butter and sugar, then add the eggs, vanilla, salt, baking powder, flour and milk


Beat well, fill cups, and bake at 375 degrees for 18-20 minutes.


To make the frosting, whip the remaining ingredients for a while, color if you want.

Notes

I've used this recipe several times for both regular-sized and mini cupcakes. It always turns out really well and the cupcakes have a light, fluffy, spongy consistency.
