Andrea’s Famous Carrot Hummus
7-10 medium to large carrots
1 cup chickpeas/1 can chickpeas
Cover the carrots after peeling with aluminum foil and roast in the oven until soft
Blend together in the mixer with olive oil, chickpeas, and tehina, salt, and juice of lemon to taste.
Once blended, dress with olive oil, cilantro, and paprika and serve!
