ANGEL ACRES SUPER YUMMY ZUCCHINI CASSEROLE

Ingredients

  • For Zucchini -
  • 2-3 WHOLE ZUCCHINI
  • ½ CUP RED ONION, CHOPPED
  • 2 LARGE TOMATOES, CHOPPED
  • 2 T BACON GREASE
  • 2 T OLIVE OIL
  • For Sauce -
  • 2 T BUTTER
  • 2 T FLOUR
  • 1 ½ C HOT MILK
  • PINCH NUTMEG
  • 2 EGGS SLIGHTLY BEATEN
  • ¼ CUP PARMESAN CHEESE

Directions

  • Heat Oven to 350 degrees
  • Part 1:
  • SLICE ZUCCHINI, DICE ONIONS.
  • COOK IN OLIVE OIL/BACON GREASE MIXTURE UNTIL SOFT ABOUT 8 – 10 MINUTES.
  • ADD CHOPPED TOMATOES FOR LAST 2 MINUTES.
  • PUT IN GREASED CASSEROLE DISH
  • Part 2:
  • HEAT BUTTER IN MICROWAVE FOR 30 SECONDS.
  • ADD FLOUR AND BLEND.
  • STIR IN HEATED MILK.
  • COOK IN MICROWAVE 2 – 3 MINUTES.
  • STIR EVERY MINUTE UNTIL THICKENED.
  • ADD NUTMEG.
  • STIR IN BEATEN EGG.
  • POUR SAUCE OVER ZUCCHINI MIXTURE.
  • TOP WITH CHEESE.
  • BAKE UNTIL TOP IS GOLDEN - ABOUT 20 MINUTES.
