Why I Love This Recipe

This is my son's recipe for roasted chicken. I hate dry chicken breast. This recipe left the breast meat so juicy and flavorful. I have been cooking professionally for over 35 years, and this is the best roasted chicken I have ever had.


Ingredients You'll Need

1 whole fryer chicken
1 TBSP soft butter
salt & pepper to taste
1 12 oz can of beer

Spices of your choosing (I used minced garlic, fresh rosemary, and tony's cajun seasoning)


Directions

Salt & Pepper your fryer, then rub the skin down with butter. Open your can of beer and add all your spices into the can. Then stand your chicken up using the breast cavity over the can of beer. Place in a baking dish, and bake at 350 until the beer implodes the chicken and the can and chicken fall over. Remove the can, and bake for 20 more minutes. Takes about 1 and 1/2 hours.
