Anna's Pasta Salad
I packet small pasta shells (or you can use any pasta as long as its small)
large handful of finely chopped parsley (add more or less if required)
6 cloves crushed garlic (add more or less if required)
1/2 cup finely grated parmesan cheese (add more or less if required)
1/4 cup toasted pine nuts
1/3 cup Olive oil (salad should not dry so more may need to be added)
Pepper and salt to taste
Cook pasta as per the instructions on the packet.
Lightly toast pine nuts.
Drain pasta well and put into large bowl.
While pasta is cooling add garlic, salt and pepper and olive oil.
Before serving and once cooled completely add parsley, parmesan and pine nuts.
Adjust seasoning if necessary.
Adding the parmesan can 'dry out' the salad so add more olive oil if required.

This simple and truly delicious salad has always been referred to as "Anna's Pasta Salad" in my family after my mums best friend who first shared the recipe. It's a BBQ staple for us and whenever I make it I ALWAYS get asked for the recipe. This recipe is very much 'to taste' so play with the quantities depending on what strength of flavour you prefer.
