Apple Cinnamon Loaf

Serves ONE 9x5 loaf pan | Prep Time 10 minutes | Cook Time 1 hour


2 cups all purpose flour
1 cup white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 cup milk
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 granny smith apple

3 tablespoons brown sugar
1 tablespoon + 1 teaspoon quick oats
1 1/2 teaspoon ground cinnamon
1 tablespoon butter(softened) or margarine


Preheat oven to 350 degrees F

Grease ONE 9x5 loaf pan

In large bowl mix flour, sugar, baking powder, baking soda, salt, cinnamon, & nutmeg, then set aside.

In a smaller bowl mix eggs, milk, oil, and vanilla. You only need to mix enough to break up eggs a little.

Peel & dice up apple.

In a small bowl combine all ingredients for the topping, just mix till it comes together then set aside.

Add the cut up apple to your dry ingredients. Just using a spatula to mix, make sure all the apples are coated with the flour.

Make a well in the middle of the bowl and add your wet ingredients.

Mix only until everything is wet, DO NOT OVER MIX.. If you over mix you end up with a tough bread( this is true for all quick breads).

Pour half of bread mixture in to your loaf pan then sprinkle half of the topping mix. Pour the rest of bead mixture on top then sprinkle the rest of the topping

Bake for 1 hour
