1 cup (2 sticks) unsalted butter, room temperature
6 tablespoons sugar
1 tablespoon instant hot apple cider mix
1 teaspoon vanilla
2 cups all-purpose flour
¼ teaspoon salt
1 tablespoon milk
¼ cup sugar, for rolling
Directions
Preheat oven to 375 degrees F. Line a baking sheet with a Sil-Pat or parchment paper.
In a large mixing bowl, beat together butter and 6 tablespoons sugar until light and creamy, about 2 minutes. Add cider mix and vanilla; mix to combine.
In a medium mixing bowl, combine flour and salt. Add flour mixture to butter mixture; mix until almost combined. Add milk, and mix until dough just comes together.
Portion dough by the tablespoonful and roll into balls. Roll each ball in sugar and place on baking sheet. Using the bottom of a drinking glass, press the cookies flat.
Bake for 9 to 11 minutes, until the edges are just beginning to brown. Remove from oven, let cool for 2 minutes on baking sheet, and then transfer to a wire rack to cool completely.
