Apple Coconut Granola
3 C. old fashioned oats
1 C. sliced raw unsalted almonds
½ C. shredded unsweetened coconut (can get at Fruitful Yield)
2 t. ground cinnamon
½ t. ground ginger
¼ t. ground nutmeg
¼ t. ground cloves
¾ C. unsweetened applesauce
2 T. melted coconut oil
2 T. 100% Pure Maple Syrup
Preheat oven to 300°. Spray a rimmed baking sheet with olive oil.
In a large bowl, mix all the dry ingredients together. In a small bowl, mix the applesauce, coconut oil & maple syrup. Add the wet ingredients to the dry ingredients and mix very well.
Spread ingredients evenly over the bottom of the baking sheet and bake for 45 minutes. Allow to cool completely and transfer to an airtight container. Store for up to 1 week.
