Apple Juice Filling
1/2 c. sugar
4 Tbsp. cornstarch
1/8 tsp. salt
1 c. apple juice
2 egg yolks
2 Tbsp. butter
1 tsp. grated lemon rind
1 Tbsp. lemon juice
Put sugar, cornstarch and salt into top of double
boiler, with water in lower part boiling.
Gradually add apple juice and cook, stirring constantly, until this thickens.
Cover and cook 10 minutes. Beat the egg yolks and slowly add to the hot filling and beat constantly until blended.
Add remaining ingredients and mix well. Let cool.
