Apple-Meat Ring

1 1/2 c. dry bread crumbs
1/4 tsp. pepper
1/4 c. chopped onion
1/4 c. diced apple
2 eggs, slightly beaten
3/4 tsp. salt
1/2 c. applesauce
1/4 c. chopped celery
1 1/2 tsp. mustard
3 c. ground beef or pork
Mushroom Sauce:
1 c. mushrooms, drained
2 Tbsp. butter
1/4 tsp. pepper
1/3 c. yogurt
2 tsp. apple juice
2 Tbsp. flour
1/2 tsp. salt
1 c. milk
1 tsp. lemon juice

Mix together bread crumbs, salt and pepper. Blend in applesauce, onion, celery, apple, mustard, egg and ground meat.

Shape into a ring. Put a custard cup inverted in the middle, this will collect the oil and keep it from the meat loaf.

Cover. Cook 6 to 8 minutes of temperature probe to 150. Serve with Mushroom Sauce.

For the sauce: Microwave mushrooms and butter in a large glass measure 1 to 2 minutes. Blend in flour, salt and pepper. Add milk and mix until smooth. Microwave 3 minutes covered, stirring 2 to 3 times until sauce thickens. Blend in yogurt, lemon juice and apple juice.
