Apple Pie Bar

4 ½ cups flour, divided
1 tsp salt
1 tsp baking powder
1 cup butter or substitute
4 egg yolks
2 tbsp lemon juice
8 to 10 tsp cold water
7 cups finely chopped peeled apples
2 cups sugar
2 tsp ground cinnamon
dash of ground nutmeg
Glaze (see below)
1 cup powdered sugar
1 tbsp milk
1 tbsp lemon juice

In a large bowl, combine 4 cups flour with salt and baking powder. Cut in butter or substitute until mixture resembles coarse crumbs.

In small bowl, whisk egg yolks, lemon juice and water; gradually add to flour mixture, tossing with fork until dough forms ball. Divide in half. Chill 30 minutes.

Roll out one portion of dough between two large sheets of wax paper into 17 x 12-inch rectangle. Transfer to ungreased 15 x 10-inch baking pan. Press pastry onto bottom and up sides of pan; trim pastry even with top edge.

Preheat oven to 375 degrees F.

In bowl, toss apples, sugar, remaining flour, cinnamon and nutmeg; spread over crust.

Roll out remaining pastry to fit top of pan; place over filling. Trim edges; brush edges between pastry with water or milk; pinch to seal. Cut slits in top.

Bake in preheated oven 45 to 50 minutes or until golden brown. Cool on wire rack.

Prepare glaze by combining powdered sugar, milk, and lemon juice in a small bowl until smooth; drizzle over bars before cutting. Makes 2 dozen
