APPLE PUDDING

Ingredients

  • 1 c. sugar
  • 1/4 c. shortening
  • 1 egg
  • 3 medium apples, diced but not peeled
  • 1 c. flour
  • 1 t. soda
  • 1/2 t. cinnamon
  • 1/4 t. nutmeg
  • 1/8 t. salt
  • Stir in 1/4 c. nuts and
  • 1/2 c. chopped dates

Directions

  • Mix all, then add sifted together sugar, shortening, egg and apples
  • Then add remaining ingredients
  • Bake in greased pan (I used 11 x 7-inch Pyrex) at 350 degrees for 25 minutes. (Test for doneness, but do not over bake as this is a moist cake.)
  • Serve with sauce.

Notes

I entered this recipe in a local apple recipe contest and won $10 first prize. It is one of my favorite desserts.
