1 3/4 cups sifted all-purpose flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp soda
1/2 tsp salt
1/2 cup butter
1 cup sugar
1/2 tsp grated lemon peel
2 Tbls lemon juice
2/3 cup evaporated milk
2/3 cup applesauce
Sift together flour, baking powder, spices, soda & salt.
Cream butter & sugar until fluffy.
Add egg & lemon rind; mix well.
Stir lemon juice into evaporated milk.
Add dry ingredients & evaporated milk mixture alternately to creamed mixture, beating well after each addition.
Stir in applesauce
Fill paper lined muffin cups 2/3 full with batter.
Bake in preheated 350 degree oven until toothpick insertd in center comes out clean (20-25 minutes)
When cold can be frosted with favorite frosting or eaten plain.
