Apricot Bars

This recipe was given to me by one of the wonderful cooks in my church. When I bring these to a family gathering, my brother-in-law always hides half of them so he can take them home with him!

INGREDIENTS

  • 3/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 1/4 tsp baking powder
  • 1 1/3 cups flaked coconut
  • 1/2 cup chopped pecans
  • 1/2 tsp vanilla
  • 1 jar (16 oz) apricot preserves

DIRECTIONS

In a mixing bowl, cream the butter and sugar. Add egg and mix well. Combine the flour and baking powder; gradually add to butter mixture. Add coconut, pecans and vanilla; mix well.


Press 2/3 of dough into a greased 13x9 pan. Spread the apricot preserves over the top of the dough. Crumble remaining dough over the preserves. Bake at 350 degrees for 30-35 minutes or until golden brown. Cool in the pan, then cut into bars.
