APRICOT BARS

 

  • Cooking Time: 30-35 minutes
  • Servings: Makes 3 dozen
  • Preparation Time: About 15 minutes

Ingredients

  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 2 cups flour
  • 1/4 tsp baking powder
  • 1 1/3 cups flaked coconut
  • 1/2 cup chopped walnuts
  • 1 Jar (10-12 oz.) apricot preserves

Directions

  • In a large mixing bowl, cream the butter and sugar
  • Add the egg and vanilla
  • Mix well
  • Combine the flour and baking powder
  • Gradually add to the creamed mixture
  • Fold in the coconut and the walnuts
  • Press two-thirds of the dough into a greased 13 x 9 inch baking pan
  • Spread with the preserves
  • Crumble the remaining dough over the preserves
  • Bake at 350 F for 30-35 minutes or until golden brown
  • Cool in the pan on a wire rack
  • Cut into bars
