Apricot Bars

Serves Makes 3 dozen | Prep Time About 15 minutes | Cook Time 30-35 minutes

Ingredients

3/4 cup butter, softened
1 cup sugar
1 egg
1/2 tsp vanilla
2 cups flour
1/4 tsp baking powder
1 1/3 cups flaked coconut
1/2 cup chopped walnuts
1 Jar (10-12 oz.) apricot preserves


In a large mixing bowl, cream the butter and sugar


Add the egg and vanilla


Mix well


Combine the flour and baking powder


Gradually add to the creamed mixture


Fold in the coconut and the walnuts


Press two-thirds of the dough into a greased 13 x 9 inch baking pan


Spread with the preserves


Crumble the remaining dough over the preserves


Bake at 350 F for 30-35 minutes or until golden brown


Cool in the pan on a wire rack


Cut into bars
