Apricot Bars

Serves Makes 20 bars | Prep Time about 15 minutes | Cook Time 40-45 minutes

Ingredients

3/4 cup butter
1 cup sugar
1/2 tsp vanilla
1 egg
1/2 tsp salt
2 cups flour
1 1/2 cups coconut
8-oz. jar apricot preserves
1/2 cups pecans, chopped


Cream the butter and the sugar


Add the vanilla, egg, salt, flour, and coconut


Mix well


Spread 3/4 of the mixture in a greased 11 x 7 inch oven-proof glass dish


Spread the preserves on the top


Combine the remaining quarter of the mixture and the nuts.


Crumble on top of the preserves


Bake at 350 F for 40-45 minutes, or until golden


Cut into bars while still warm


Makes 20 bars
