APRICOT GLAZED PORK ROAST
- 1 can chicken broth
- 1 18 ounce jar apricot preserves
- 1 large onion, chopped
- 2 tablespoons dijon mustard
- 1 3-4 pound boneless pork loin roast
Mix all but the meat in the crockpot. Add the meat and turn to coat. Cover and cook on low for 8-9 hours.
Can add some chopped green chilies
Chicken breast or turkey would work well in it
