Apricot Meringue Bars

Serves 32 Bars | Prep Time 15 minutes | Cook Time 45 Minutes total

Ingredients

3 cups flour
1 cup sugar, divided
1 cup cold butter
4 eggs, separated
1 tsp vanilla
2 cans (12 oz. each) apricot filling
1/2 cup chopped pecans


In a large bowl, combine the flour and 1/2 cup sugar


Cut in the butter until crumbly


Add the egg yolks and vanilla


Mix well


Press into a greased 15 x 10 inch baking pan


Bake at 350 F for 12-15 minutes or until lightly browned


Spread the apricot filling over the crust


In a large bowl, beat the egg whites until soft peaks form


Gradually add the remaining sugar, 1 tablespoon at a time


Beat until stiff peaks form


Spread over the apricot layer


Sprinkle with the pecans


Bake for 25-30 minutes or until lightly browned


Cool in the pan on a wire rack


Cut into bars
