APRICOT MERINGUE BARS

Ingredients

  • 3 cups flour
  • 1 cup sugar, divided
  • 1 cup cold butter
  • 4 eggs, separated
  • 1 tsp vanilla
  • 2 cans (12 oz. each) apricot filling
  • 1/2 cup chopped pecans

Directions

  • In a large bowl, combine the flour and 1/2 cup sugar
  • Cut in the butter until crumbly
  • Add the egg yolks and vanilla
  • Mix well
  • Press into a greased 15 x 10 inch baking pan
  • Bake at 350 F for 12-15 minutes or until lightly browned
  • Spread the apricot filling over the crust
  • In a large bowl, beat the egg whites until soft peaks form
  • Gradually add the remaining sugar, 1 tablespoon at a time
  • Beat until stiff peaks form
  • Spread over the apricot layer
  • Sprinkle with the pecans
  • Bake for 25-30 minutes or until lightly browned
  • Cool in the pan on a wire rack
  • Cut into bars
