Apricot Sausage Rice

Why I Love This Recipe
This is another recipe that I found in a newspaper and have made many times over the years. It never fails to please!
Ingredients You'll Need
1 lb tube frozen sausage
1/2 med onion, diced
1 stalk celery, chopped
1 1/2 cup rice
1/2 cup dried apricots, halved and sliced
1/2 pecans, chopped (almonds also work well)
1/4 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp salt
1/4 tsp pepper
3 cups water or chicken stock
Brown sausage and stir in onions & celery in a large sauce pan. Remove from heat and drain fat.
Stir in water or stock, rice, apricots, pecans, and spices.
Bring to a boil, then reduce heat to simmer for 20 min with lid on. No peeking.
Let stand 5 min.
Pairs Well With
Cornish Game Hens basted in butter & apricot jam. It also make a yummy side for bratwurst sausages!
