AROMATIC YELLOW RICE

Ingredients

  • 2 cups long grain rice
  • 1 can coconut milk
  • 2 cups water
  • 1/4 tsp salt
  • 3/4 tsp ground turmeric
  • 3 - 4 cloves
  • 3 bay leaves
  • 6 dried apricots, chopped
  • 2 tbsp dried cranberries
  • 2 tbsp raisins

Directions

  • Combine all ingredients.
  • Bring to a boil.
  • Simmer 25 minutes.
  • Let stand 10 minutes.
  • Remove cloves and bay leaves.
  • Fluff rice with fork before serving.

Notes

A delicious variation of rice. It goes very well with chicken souvlaki.
