ARROZ CON POLLO - CHICKEN AND RICE

Ingredients

  • 2 large onions finely chopped
  • 1 large green pepper finely chopped
  • 2 cloves of garlic
  • ½ cup olive oil
  • salt, pepper and oregano to taste
  • In a large pot, sauté the above listed ingredients until tender. Add:
  • 1 whole Chicken cut up (or you can substitute shrimp if desired)
  • 3 cups of rice (mom likes Uncle Ben’s for this recipe
  • 4 cups water
  • 1 small can of tomato sauce
  • salt and olive oil to taste

Directions

  • Cook covered on a low heat for 15 to 25 minutes, until most of the liquid has been absorbed. Add:
  • 1 small jar of pimentos
  • 1 small can of petite pous (peas)
  • Continue to cook until the rice has absorbed all the excess liquid and is tender to the bite.
