ARTICHOKE PASTA SALAD
- 1/2 lb corkscrew noodles, cooked
- 2 jars of artichoke hearts (reserve liquid) chopped
- 1/3 cup celery, diced
- 1 medium tomato, diced
- 1/2 cup red onion, diced
- 1 tbls red wine vinegar
- 1/2 cup parmesan cheese, grated
Combine all ingredients; chill
If desired, add diced bell peppers (red, green, orange, yellow) and / or chopped salami
I remember falling in love with this recipe at my baby shower. Thank God the hostess gave me the recipe so that I could still make it 20 yrs later.
