- 1 can artichoke hearts, drained and cut into quarters
- 1 can white beans, drained and rinsed
- 3 cloves minced garlic
- 2 tablespoons olive oil
- 2 tablespoons butter
- salt and pepper to taste
- crushed red pepper
- 1/2 cup white wine
- 1 bunch swiss chard (I wanted escarole but couldn't find it), chopped
- Warm the olive oil and butter together over medium-low heat. Add the garlic and saute until fragrant then add the chard all at once. Raise heat to medium and occasionally turn chard with tongs until it begins to wilt. Add remaining ingredients and cook until heated through. Serve with crusty bread. This would be lovely topped with freshly grated Parmesan cheese.
NotesThis is quick and easy, very nearly what Jason calls a "dump dish" meaning ingredients are all dumped out of a can.
