Asian Cocktail Meatballs

Serves | Prep Time 15 minutes | Cook Time 20-30 minutes

Ingredients

For meatballs:1 1/2 lb. ground lean turkey
1/4 c. bread crumbs
1 beaten egg
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. ground ginger
For sauce: 1 c. apricot jam
1/2 c. hoisin sauce
1/2 c. rice vinegar
1/2 tsp. cayenne
1 red pepper, diced


For meatballs: Blend all ingredients with a hand mixer until combined


Shape into balls just larger than a walnut


Heat a little oil in a large pan and brown meatballs on all sides and set aside


In a large saucepan, mix sauce ingredients over medium heat until jam is melted


Add meatballs and cook 15 minutes


Serve hot
