ASPARAGUS WITH FRESH CHANTERELLE MUSHROOMS

Ingredients

  • Fresh Asparagus (cleaned)
  • Fresh Chanterelle Mushrooms (cleaned)
  • 3-4 Cloves Garlic
  • 2 Tablespoons Butter
  • 1 Tablespoon Pure Italian Olive Oil
  • Salt and Pepper to desired taste

Directions

  • Steam asparagus until just tender or to desired doneness
  • Saute garlic in the butter and olive oil for about 1 minute
  • Add chanterelle mushrooms and saute for approx 5-7 minutes with the garlic
  • Add salt and pepper to taste
  • Arrange asparagus on platter
  • Pour the sauted chanterelle/garlic over the asparagus
  • Enjoy.

Notes

Eric threw this together as a side dish, we had so many fresh chanterelle mushrooms. This is simple and delish.
