Aunt Helen's Vegetable Casserole
2 large packages mixed vegetables (broc, car,caul)
1 small box Velveeta cheese
1 tube ritz crackers, crushed
1 stick butter, melted
Cook and drain vegetables (Aunt Helen always used fresh vegetables). Put in 9x13" baking dish. Top with cubed cheese then blend crackers with melted butter and sprinkle on top of vegetables. Bake 350 for about 20 minutes or until bubbly.
