INGREDIENTS
- 3 large eggs
- 2 cups sugar
- 1 cup oil
- 2 cups zucchini, grated
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3 teaspoons cinnamon
- 1 cup nuts, chopped
DIRECTIONS
Mix together: 3 large eggs, 2 cups sugar, 1 cup oil, 2 cups grated zucchini and 3 teaspoons vanilla.
Combine the following and and add to above mixture: 3 cups flour, 1 teaspoon salt, 1 teaspoon baking soda, 1/4 teaspoon baking powder and 3 teaspoons cinnamon.
Stir until well blended. Add 1 cup shopped nuts. Bake at 350 degrees for 1 hour. Cool on wire rack. Makes 2 loaves
