Aunt Mert’s Pepper Steak
3 cups hot cooked rice
1 lb lean round steak cut 1/2” thick
1 Tbsp paprika
2 Tbsp margarine
2 Cloves garlic
1 1/2 cups beef broth
1 cup sliced green onion including tops
2 green peppers sliced
2 Tbsp cornstarch
1/2 cup water
1/2 cup soy sauce
2 large fresh tomatoes cut into 8th (optional
Pound steak into 1/6” thickness
Cut steak into 1/4” strips.
Sprinkle with paprika and let stand a while.
In large skillet brown meat in margarine
Add garlic and broth.
Cover and simmer 20 minutes
Sire in onions and peppers
Cook and cover until meat is tender.
Blend cornstarch, water and soy sauce, then add to meat.
Stir well until thick and clear.
Add tomatoes and stir gently
Serve over bed of fluffy rice.
