Austrian Goulash

Serves | Prep Time | Cook Time

Ingredients

3 pounds chuck roast; cut in 1" pieces
4 large onions chopped
4 cloves garlic, minced
6 Tbl. Paprika (4 Tbl Sweet 2 Tbl hot)
2 Tbl white vinegar
6 bay leaves
1/2 tsp. Thyme
1/2 tsp. Marjoram
Salt & pepper to taste
Water or beef stock to cover (at least 4 cups)
1/4 to 1/2 cup AP flour
16 oz. sour cream
1/2 pound white mushrooms, cut in quarters


Brown meat with onions. Strain off any fat. Add water/stock to cover, then add garlic & spices (Paprika through salt & pepper). Cover and simmer until meat is tender, about 1 1/4 hours. Remove lid and simmer for about 45 minutes long, until some of liquid is evaporated. You will stay quite abit of liquid, don't panic! Sprinkle flour over liquid and whisk in until thick. Turn off heat and add mushrooms and sour cream, stir and cover. Enjoy!
