Autumn Cheesecake

Ingredients

Crust:
1 cup graham cracker crumbs
1/2 cup pecans, finely chopped (any nuts will work)
3 tablespoons sugar
1/2 teaspoon cinnamon
1/4 cup butter, melted
Filling:
2 pkgs. (8 oz. each) cream cheese, softened
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
4 cups apples, peeled and cored, thinly sliced
1/3 cup sugar
1/2 teaspoon cinnamon
1/4 cup pecans, chopped


Combine crust ingredients. Lightly spray 9-inch springform pan with cooking spray. Spread crust mixture into pan and pat lightly. Bake at 350ºF for 10 minutes.



In bowl, combine cream cheese and 1/2 cup sugar. Mix at medium speed until smooth. Beat in eggs one at a time, mixing well after each addition. Blend in vanilla. Pour over baked crust.



In a small bowl stir apples, 1/3 cup sugar, and cinnamon. Toss to coat. Spoon apple mixture over cream cheese layer and sprinkle with pecans. Bake at 350ºF for 60-70 minutes.



With a knife, loosen cake from rim of pan. Let cheesecake cool completely on wire rack. Remove rim of pan and chill cake before serving.
