Avocado Chicken Salad
2 avocados, mashed
3 cooked chicken breasts, chopped/shredded
4 Tbsp white wine vinegar
juice of 1 lime (or 4 packets of the True Lime crystals- those are awesome)
1 bunch of cilantro- chopped
something crunchy- red cabbage, sweet peppers, celery, etc.
Garlic- 1 clove chopped or garlic powder (I prefer powder, myself) to taste
salt to taste
Cook the chicken breasts and chop them into little bits. Or shred them. Whatever.
In a separate bowl, mash the avocado and mix everything else.
Add the chicken.
Salt/garlic to taste. Keep tasting it until it's delicious.
Serve in pita bread, with crackers, or just alone. It's wonderful however it's consumed.
