Avocado Eggs Benny

Serves 1 | Prep Time 10 | Cook Time 5

Ingredients

1/2 Avocado (very ripe)
1 1/2 Tbsp Light Mayonnaise
1 Egg
1 1/2 Tbsp Feta Cheese
1/2 Tbsp Lemon Juice
1 Slice of Multigrain Bread
1 Pinch each - Salt and Pepper


Fry or poach egg. Add feta near end of cooking to top of egg to slightly melt. Toast bread. Mix mayonnaise, lemon juice, S&P, avocado very well with whisk till there are no lumps. Top egg on toast and pour sauce on top.
