1 cup wine - for the cook
2 ripe avocados, peeled, pitted and coarsely chopped
1 small jalapeno, finely diced
2 tomatillos, husked and coarsely chopped
3 Tablespoons lime juice
3 Tablespoons red onion, finely chopped
2 Tablespoons canola oil
Gently combine all ingredients, season to taste with salt and pepper. Use as a garnish on Tortilla Soup, Black Bean soup, or chile. Good on fish or chicken.
