Why I Love This Recipe

I'm weird I don't really like mac and cheese to well. But I know the rest of the universe does! So here is my mothers recipe for you to try because I think its the best in this universe :)

Ingredients You'll Need

1 LBs elbow macaroni or baby shell macaroni or spiral macaroni barely cooked still kind of stiff al dente (it cooks more in oven)
1 stick of Butter
1/3 C Flour
4 C Milk
1 TBS Cornstarch mixed into 1 cup of the milk
1 C cubed Velveeta cheese
2 C shredded Cheddar cheese (I use Colby cheese)
1 C Shredded Provolone cheese
Sour cream
Opt: 2- 4 TBS diced tomatoes (my mom used the tomatoes about 1/2 the times she made it but I never added them)
3 TBS butter
Garlic powder
Parsley flakes
Unseasoned bread crumbs (I use garlic butter croutons chopped up in processor)
About 1 C Parmesan cheese
*Note: Someone said they used stove top stuffing all chopped up in food processor for topping


Grease w/ butter 9x13 baking dish and preheat oven to 350 F
Make pasta firm al dente strain and put back in pan w/ lukewarm water

On stove top melt 1/2 stick of butter and stir in flour cook over low heat a couple mins stirring constantly then remove from heat and set aside

In another pan heat 3 cups milk over low heat so not to scald stir often when simmering add other 1/2 stick of butter and stir til melted then remove from heat

Mix milk mix with flour mix over low heat stirring constantly until milk mix thickens up and remove from heat. Add cheeses (velveeta, cheddar and provolone) Stir until melted add sour cream

Add cornstarch to other cup of milk and stir well then pour over all of the cheese mix stirring as you go

Strain pasta and add to cheese mix. Stir and pour into baking dish bake for about 10 mins then add topping

Melt butter in pan sprinkle garlic powder and parsley over butter and add bread crumbs turn off heat and stir til well coated sprinkle parm. cheese over bread crumbs then add to top of mac and cheese and return to oven. Cook until pasta is done, cheese is all melted and topping is browned a lil
