6 rib pork chops, cut 1
1/2-inches thick, with a
pocket
Stuffing:
1/4 c. butter or margarine
1/2 c. chopped onion
1/2 c. chopped celery
2 c. soft bread cubes
1/2 c. dark raisins
2 Tbsp. chopped parsley
1 tsp. salt
1/8 tsp. pepper
1 tsp. marjoram leaves
1/4 c. apple juice
1/2 tsp. salt
apple juice
glazed apple slices
Directions
Preheat oven to 350 degrees.
Wipe pork chops with damp paper towel.
To make stuffing:
In hot butter in skillet, cook onion and celery until tender, about 5 minutes.
Add bread crumbs and brown slightly.
Remove from heat.
Add raisins, parsley, 1 teaspoon salt, pepper, marjoram and 1/4 cup apple juice; toss
mixture lightly.
Fill pocket in chops with stuffing.
Stand chops on rib bones in shallow roasting pan; sprinkle with 1/2 teaspoon salt.
Pour apple juice to 1/4-inch depth in pan.
Cover chops and pan with foil.
Bake chops 45 minutes.
Remove foil; bake, uncovered, 45 to 55 minutes longer.
Garnish with apple slices.
