1 c. pearl barley, washed and
6 Tbsp. butter
1/3 c. minced green onions
1/4 to 1/2 c. slivered almonds
1 medium onion, chopped
2 (14 oz.) cans beef or
Brown almonds in 2 tablespoons butter. Remove with
slotted spoon. Brown barley and onions with remaining butter.
Add almonds and stir. Put in 1 1/2 to 2-quart casserole.
These steps may be done ahead and refrigerated.
Boil broth and green onions in pan before ready to bake.
Pour over barley in casserole. Stir and cover. Bake at 350 degrees
for 1 hour and 10 minutes. Good with chicken or beef. Serves
8 to 10.
