BLACK CHOCOLATE CUSTARD WITH BERRY AND ALMOND CRUMB

Ingredients

To decorate:

Berries

White Chocolate Custard:

300 ml heavy cream
100 ml milk
1 vanilla bean without seeds
200 gr chopped chocolate
4 egg yolks
1/4 cup sugar

Almond Crumb:

150 gr flour
2 tsp brown sugar
80 gr butter
2 tsp sugar
1/3 cup almond


Custard: place cream, milk and vanilla in a saucepan over medium heat and stir mix sometimes


Place chocolate in another bowl. Pout in half the hot cream mix (step 1) and stir until smooth


Place egg yolks and sugar in a third bowl and beat, whisk until get creamy texture


Pour chocolate mixture and add egg yolks mix into a clean saucepan. Stir over medium-low heat for 8 minutes


Serve into glasses and refrigerate for 4 hours or until set. Add berries in the center of custard.



Almond crumb (if you want):


Preheat oven to 350F


Mince almond


Mix flour and sugar, add butter until fine crumbs form. Spread mix into a fry pan in a single lay


Bake for 15 minutes until crisp and likely color.


Place on the top of custard and berries.
