Ingredients You'll Need
16-20 cherry tomatoes
1 pound bacon, cooked and crumbled (I use turkey bacon)
1/2 cup mayo or salad dressing
1/3 cup chopped green onions (I used regular onion and chives one time)
3 tbs grated parmesan cheese
2 tbs snipped fresh parsley
Cut a thin slice off of each tomato top.
Scoop out and discard the pulp of each tomato.
Invert the tomatoes on a paper towel to drain well (I almost never do this).
Combine all ingredients other than tomatoes and mix well.
Spoon "bacon salad" mixture into tomatoes. Refrigerate for several hours.
