  • 4 six ounce fillets of beef
  • 4 tablespoons olive oil
  • Salt and black pepper
  • 3 to 4 ounces Bleu Cheese, crumbled
  • 6 eggs yolks
  • 1 teaspoon Worcestershire sauce
  • Juice of one lemon
  • Salt and cracked black pepper
  • ½ cup heavy cream


  • • Preheat the oven to 400 degrees. Preheat the grill. Rub
  • the fillets with 2 tablespoons olive oil. Season each fillet
  • with salt and pepper. Place the fillets on the hot grill and
  • cook for about 6 to 8 minutes on each side for medium
  • rare. Place each fillet on an ovenproof plate and spoon the
  • glaze (see below) over the fillets and around the rim. Place
  • the fillets in the oven and roast until the glaze is lightly
  • golden brown, about 2 minutes. Serve. Serves 4.
  • • In a food processor, puree the cheese, yolks,
  • Worcestershire sauce and juice of one lemon together,
  • until smooth, about 2 minutes. Season with salt and
  • cracked pepper. With the machine running, slowly add
  • the cream and combine until velvety and creamy. If the
  • glaze does not have a ribbon like texture, add a little more
  • cream. Yield: about 2 ½ cups
