BRUSCHETTA CHICKEN BAKE
1 can (19 oz.) Italian stewed tomatoes, undrained
2 minced cloves of garlic
1 pkg. (120 g) Stove Top stuffing mix for chicken
1-1/2 lb. boneless skinless chicken breasts, cut into bite sized pieces
1 tsp. dried basil
1 cup shredded motzarella cheese
Preheat oven to 400 degrees.
Place tomatoes with liquid in medium bowl. Add garlic and stuffing mix; stir just until stuffing mix is moistened.
Place chicken in a 13 x 9 “ pan; sprinkle with basil and cheese.
Top with stuffing mix.
Bake for 30 minutes or until chicken is cooked through
Pairs Well With
This is a very simple to make meal. Not labour intensive and has lots of flavour. If you don't count the carbs from the bread in the stuffing mix then it is really healthy too.
