Ingredients You'll Need
1 eggplant cut into squares
1 red bell pepper diced
2 celery stalks sliced
4 garlic cloves minced
1 medium onion chopped
6 TBSP of olive oil
1 cup marinara sauce *see recipe
2 oz. capers
salt to taste
parsley chopped to garnish
Directions
Pre set oven at 350 degrees.
Put all ingredients in a bowl and toss.
Transfer to a cooking sheet and bake at 350 degrees for 1 hour.
Place in a bowl and toss with parsley.
