Bacon, Egg & Cheese Cups

Serves 1 | Prep Time 10 | Cook Time 15-20

Ingredients

Eggs
Olive oil
Bacon or Turkey Bacon
Shredded Cheese


1. Spray muffin pan with olive oil.


2.Line each cup with 1 piece of bacon. Keep it somewhat flush with the side of the cup. 3.Crack open 1 egg in to each cup, inside the bacon ring.


4.Add your favorite seasonings, (I just use pepper).


5.Bake in the oven on 375° for 20 minutes for hard eggs, 15 minutes for medium. 6.Remove from oven. Top with salsa, cheese and whatever else you want.



You can really play around with this! You can add some chopped onion, peppers, pretty much anything you want in the bottom of the cup before adding the egg! Or even whisk the eggs and your added veggies in a bowl before pouring it in to each cup!

Great for low carb! Don't serve plain ol' boring eggs & bacon, make these instead and WOW those you are cooking for!
