Bacon Wrapped Wafers
12 strips of thinly sliced bacon, about 6 oz.
24 butter crackers, such as Waverly wafers (or you can use Ritz)
Cut bacon slices in halves.
Separate crackers at perforations.
Wrap bacon strip around center of each individual cracker (bacon will adhere when overlapped).
Place on broiler rack, seam side down, over drip pan.
Bake (do not broil) at 350 degrees for 20-25 minutes, or until bacon is crisp.
Bacon Wrapped Wafer II: Brush bacon-wrapped crackers lightly with honey before baking.
Bacon Wrapped Wafer III: Sprinkle bacon-wrapped crackers lightly with brown sugar before baking.
If you prefer, put a tsp of fresh Parmesan Cheese on top of the cracker before wrapping the bacon around it.
