5 cups all-purpose flour
5 ½ tsp. (almost 3 packages active dry yeast)
1 1/2 cups warm water (110 degrees F/45 degrees C)
3 tablespoons white sugar
1 tablespoon salt
Mix 1 ½ cups flour, sugar and salt in a mixing bowl and set aside.
Mix yeast, warm water and 1 T sugar – let it activate
Add yeast mixture to flour mixture and mix well. Add rest of flour and knead until smooth and workable dough is formed
Cover and let rise for 20 min. punch down.
Divide dough into four sections. Each section makes 3 balls of dough
Roll each ball into a log and punch closed
Let rise for 20 min on parchment paper
Place 5-6 inches of water in a large pot to boil. Drop risen bagels inside and boil for 90 seconds exactly then flip and let boil another 90 seconds exactly.
Remove immediately with tongs and place on a towel to drain and cool
Dip into toppings
Bake for 20 min at 325 degrees
