5 eggs, beaten
8-oz. container cottage cheese
1/4 c. all-purpose flour
1/2 t. baking powder
1/4 c. butter, melted
2 T. green onion, minced
4-oz. can diced green chiles, drained
8-oz. pkg. shredded Monterey Jack cheese
Combine eggs and cottage cheese; blend until almost smooth.
Add flour, baking powder and butter; stir in onion, chiles and cheese.
Pour into a lightly greased 8"x8" baking pan. Bake at 350 degrees for 30 to 40 minutes.
Let cool slightly; cut into squares.
Makes 2-1/2 dozen.
