BAKED TOMATOES WITH MOZZARELLA

Ingredients

  • large beefsteak tomatoes
  • Mozzarella - cubed
  • extra-virgin olive oil
  • fresh basil

Directions

  • Slice top off of the tomato - set aside. Scoop out most of the inside of the tomato.
  • Fill cavity with cubed mozzarella.
  • Drizzle olive oil over cheese and tomato. Sprinkle with chopped basil.
  • Replace top on tomato. Bake in 350 degree oven for 10-15 minutes.
