Baked Apples with Pineapple Filling

Ingredients

6 large Granny Smith Apples
1/2 cup crushed pineapple, drained
1/4 cup golden raisins
3/4 cup guava jelly, melted


Core apples and score around the center. Place apples in a shallow ovenproof dish. Add about 1/2 inch white wine. Stir together pineapple and raisins, divide the filling between the apples. Pour 2 tablespoons of the melted jelly over each apple. Place in 350ºF preheated oven and bake until the apples are tender, about 45 minutes. Baste the apples from time to time as the apples are cooking. When baked place the apples in small dishes and spoon over some any liquid that is in the pan; chill. For a real treat add one scoop of macadamia nut ice cream on each apple.

This is a very simple dessert and was given to us by a friend in Hawaii.

This looks amazing...will try out soon, but maybe use cranberries instead of raisins, still have a ton left over I didnt use during the holidays. ps would a reisling work for the wine?
