Baked Artichokes

Serves 8 | Prep Time 15 | Cook Time 30

Ingredients

1 – 6oz jars marinated artichoke hearts, drained and juice set aside
1 small onion, minced
1 tsp minced garlic
4 eggs, beaten
1/4 cup herbed breadcrumbs
1/8 tsp oregano
1/2 cup grated cheddar cheese
1/2 cup grated jalepeno cheese
1 cup grated parmesan cheese
2 Tbsp parsley
Salt and pepper


Put about 2 Tbsp drained artichoke marinate in skillet and add onion and garlic, and sauté. Chop artichokes and set aside. In bowl, combine eggs and bread crumbs. Fold in cheeses, parsley and oregano, mixing well. Add artichokes and onion mixture. Salt and pepper to taste. Pour into greased 9 inch square baking dish. Bake at 325 degrees for 30 minutes. Cool and cut into squares.
